Cornflake-Crusted French Toast with Buttermilk Syrup

We stayed with some ex-pat friends for a weekend and for breakfast one morning, our host served oatmeal with buttermilk syrup. It was fabulous! So sweet and vanilla-y that I had to try the syrup out for myself. Luckily, she was kind enough to share her recipe.

Initially I was just looking for an excuse to make buttermilk syrup with dinner (Oops! Did I just say that?), but then I remembered that I had a french toast recipe I'd been wanting to try for a while. Cornflake-crusted french toast may sound a little odd, but it is very good and a sure-fire way to amend dreaded french toast sogginess. We loved the crunchiness from the cornflakes. So, if you find yourself in a french toast rut, try this one out!



Cornflake-Crusted French Toast

Makes 8-10 pieces

Ingredients
1 loaf French bread (or your BiH equivalent)
1⁄3 cup milk
1 tablespoon sugar
1 tsp. ground cinnamon
1⁄4 teaspoon salt
1 tablespoon orange juice
4 eggs, lightly beaten
2 1/2 cups cornflakes, coarsely crushed
butter

Directions
1) Slice loaf into 1"-thick slices with a serrated knife.
2) In a shallow dish, whisk together milk, sugar, cinnamon, salt, orange juice, and eggs. Put cornflakes into a separate shallow dish. Working with one slice of bread at a time, dip bread in the egg mixture, allowing to soak for several seconds on each side, then coat well in the cornflakes.
3) Heat butter in a nonstick skillet over medium heat. Transfer slices of bread to the pan and cook, turning once, until both sides are golden brown, about 4 minutes per side.
4) Wipe out skillet, add more butter, and repeat process. Serve with buttermilk syrup. Enjoy!


Brooke's Buttermilk Syrup

Makes approximately 2 cups

Ingredients
1/2 cup butter
1 1/4 cups milk or buttermilk
1 teaspoon vanilla extract or vanilla secer powder
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vinegar

Directions
1) Melt butter in a pot on the stove. Add milk, vanilla, sugar, salt, and baking soda.
2) Bring to a boil. Reduce heat and let simmer for a several minutes, stirring frequently. It will froth up quite a bit.
3) When it is the consistency you want and just before you serve, add vinegar. Serve warm. Enjoy!
