Strawberry Cake

Ok, not only is this cake impressive-looking, but it's also just plain delicious.  And--oh yeah!--it's really easy.  I love recipes like that.

Strawberry Cake

Serves 8

Ingredients
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons butter
1 cup plus 2 tablespoons sugar
1 egg
1/2 cup milk
1 teaspoon vanilla extract
1 pound strawberries, halved and hulled

Directions
1) Whisk flour, baking powder, and salt together in a medium-sized bowl.
2) In a larger bowl, mix together butter and 1 cup sugar with an electric mixer until pale and fluffy.  Add egg, milk, and vanilla and mix until just combined.  Add dry mixture gradually, mixing until just smooth.
3) Pour batter into a greased 9-inch springform pan.  Arrange strawberries cut-side down on top of batter, as closely as possible in a single layer.  Sprinkle remaining 2 tablespoons sugar over berries.
4) Bake at 350 degrees for 10 minutes then reduce oven temperature to 325 and bake cake until golden brown and a tester comes out clean, about 45-55 minutes.  Let pan cool and cut into wedges.  Serve with whipped cream.  Enjoy!
