Pasta Dinner Soup





















There's something about this dish that's oddly reminiscent of my childhood--in a really good way. It's like taking a pasta dinner and turning it into a delicious, comforting soup. You really can't go wrong with this recipe.



Pasta Dinner Soup

Serves 4

Ingredients

1/2 pound ground beef or turkey
1 onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 tablespoon parsley
2 cups water
1 can (32 ounces) stewed tomatoes
2 cups beef broth
1/2 cup frozen spinach, thawed and drained, optional
1 1/2 cups spiral pasta, uncooked
salt and pepper, to taste

Directions
1) In a large sauce pan, brown ground beef with garlic and onion.
2) Add chili powder, parsley, water, stewed tomatoes, beef broth, and spinach, if desired. Bring to a boil. Reduce heat and simmer 30 minutes.
3) Add pasta and simmer until pasta is tender. Garnish with mozzarella cheese. Enjoy!
