I'm not really one for sneaking things into food (ok, so I have done it on occasion), but I thought I'd give this a try anyway. My family isn't wild about homemade macaroni and cheese, so really, what could be the harm in adding a little cauliflower to the sauce? Imagine my surprise when they all loved it! And, what's more, it was almost as easy as making the stuff from the box.
Macaroni with Cauliflower Cheese Sauce

Serves 4
Ingredients
1/2 pound macaroni
1/4 head cauliflower, cut into florets
8 ounces sharp white cheddar, shredded
1/2 cup milk
1/2 teaspoon dried parsley
salt and pepper to taste
Directions
1) Bring a large pot of salted water to a bowl and cook the pasta according to package directions until al dente. Drain and set aside.
2) Bring a medium pot of salted water to a boil, add the cauliflower and cook for 5-7 minutes, or until soft. Drain well. Place the cauliflower in a blender and puree.
3) In a medium-sized pot, place the pasta, cauliflower puree, cheese, and milk over medium heat. Stir gently to combine and continue stirring until cheese is melted.
4) Season with parsley and salt and pepper to taste. Serve immediately. Enjoy!
