Blueberry Butterscotch Bars

I had some blueberries to use and was looking for something different--something besides the muffins, crisps, and crumbles--when I found these babies.  You may be thinking, blueberries and butterscotch?  Really?  But it somehow works.  There's nothing fancy about these, but they're very good.  We liked them best when they were still warm.



Blueberry Butterscotch Bars

Serves 12-16


Ingredients
1 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup butter, softened
1 cup sugar
2 cups blueberries, fresh or frozen
1/2 heaping cup butterscotch chips
2 tablespoons brown sugar
Directions
1) Mix flour, salt, baking soda, butter and sugar. Fold in blueberries. 
2) Press dough gently but firmly into a greased 9x 13 pan. 
3) In a small bowl, mix butterscotch chips with brown sugar and spread over the top of the dough. 
4) Bake at 350 degrees for 25-30 minutes or until the dough begins to golden.  Enjoy!

  1. Doesn't this recipe need 2 eggs?

    1. Gail: I double-checked the original source for the recipe and it didn't have any eggs in it, either. If you try it with eggs, let me know how it goes!
