Berry Coffee Cake

Throw some berries in a coffee cake? Great idea! This was a definite winner with my family. The only thing I would change the next time I make it (just stick with me now) is instead of putting the batter in the pan, sprinkling it with berries, and then adding the topping, I would pour in half of the batter, throw in the berries, add the rest of the batter and then the topping. Phew. But make it however you want and let me know what you think.



Berry Coffee Cake

Serves 9

Ingredients

CAKE:
2 cups flour
2 1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter
3/4 cup sugar
1/2 teaspoon vanilla
1 egg
1/2 cup milk
2 cups fresh or frozen berries, thawed and drained (Whatever kind of berries you want. I used a mix.)

TOPPING:
1/2 cup flour
1/4 cup sugar
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter

Directions
1) Grease a 9x9 inch or 8x8 inch baking pan; set aside. In a medium bowl combine the 2 cups flour, baking powder, cinnamon and salt; set aside.
2) In a medium bowl beat butter on medium speed for 30 seconds or until soft. Add the 3/4 cup sugar and vanilla and beat on medium-high until light and fluffy. Add egg, beat well.
3) Add flour mixture and milk alternately to wet mixture, beating until smooth after each addition. Spoon batter into prepared pan. Sprinkle with berries. (OR pour half the batter into prepared pan; sprinkle with berries, and pour remaining batter on top.)
4) In another bowl combine the topping ingredients. Using a pastry blender, cut in butter until mixture resembles coarse crumbs; sprinkle over berries. Bake in a 350 degree oven for 45-55 minutes. Enjoy!
