Ham and Asparagus Breakfast Sandwiches



We have breakfast for dinner, in some form or another, about once a week. I just love the breakfast foods, but rarely make the time to fix it in the morning. But with leftover broiled asparagus and yellow pepper from the wraps we had the other day, what's a girl to do but make some breakfast sandwiches? And they were delicious!




Ham and Asparagus Breakfast Sandwiches

Makes 4 breakfast sandwiches

Ingredients
4 English Muffins, split and toasted
3 eggs
salt and pepper
1-2 slices ham, cut into quarters (depending on size of ham)
8 slices Pepper Jack cheese
8 asparagus stalks, broiled and halved
8 yellow pepper slices, broiled (optional)

Directions1) Scramble eggs; season with salt and pepper to taste. In a separate pan, lightly brown ham.
2) Once eggs are cooked to preference, divide into four parts. Assemble sandwiches, layering the remaining ingredients. Enjoy!
